Let’s look at the main ingredients:

  • Eggs
  • Almond flour
  • Butter
  • Cream cheese
  • Chocolate chips
  • Sweetener

Eggs and almond flour are natural, nutritious foods. Each has its own health benefits and provides a great source of healthy omega fats for healthy sugar-free chocolate chip cookies.

But what about butter and cream cheese? What about the added milk in chocolate chips? Is dairy healthy?

Here’s what we know. Dairy is full of vitamins, minerals, protein, and natural fat energy. But if everyone consumed dairy all of the time, dairy farming would become abusive and unsustainable…

Let’s be mindful of our dairy intake. Buy dairy that comes from pasture-raised cows and limit consumption.

Sugar is what makes food unhealthy.

Add 40g of sugar (20g/serving) to this recipe and you’re looking at heartburn with an energy crash. (And you’ll be scouring the pantry for your next sugar snack within the hour.)

Substitute the sugar for quality sugar alcohol, and this dessert becomes nourishment. The ingredients provide vitamins, minerals, and long-lasting energy.

Cookie Skillet Tips

1. Use room-temperature ingredients

To allow for super easy mixing and to avoid overworking the batter, let your butter, cream cheese, egg, and egg yolk come to room temperature before combining the ingredients.

2. Use a mini cast iron pan

This cookie skillet is best cooked and served in a mini cast iron pan. The cast iron keeps your cookie warm and gooey. And you can eat from the skillet with a metal spoon.

3. Include different mix-ins

We love the simplicity of classic chocolate chip cookie dough but feel free to mix and match your favorite add-ins to make this cookie skillet your own. For instance, chopped nuts or raisins are a great way to add extra nutrients and texture to the dish.

4. Add your favorite toppings

We like to top our cookie skillet with a scoop of low-carb vanilla ice cream. However, it also tastes great with a drizzle of sugar-free chocolate syrup, sugar-free caramel sauce, or even melted nut or seed butter instead.

5. Prepare in advance

Make the cookie dough ahead of time, and keep it on hand for a quick treat whenever a craving hits. Spread the dough in a skillet, and keep it covered in the fridge for up to 2-4 days before baking.

6. Have leftover chocolate chips?

Use them to make our apple samoas cookies or sugar-free chocolate toffee!
