DO YOU NEED TO LET THE SLOW COOKER CORNED BEEF REST AFTER COOKING?

Yes, it’s important to let the corned beef rest for a few minutes after cooking before slicing and serving it. This allows the juices to redistribute throughout the meat and helps to keep it moist and tender.

When the corned beef is done cooking in the crockpot, remove it from the slow cooker and place it on a cutting board. Cover it with foil and let it rest for about 10-15 minutes. This will give you enough time to prepare any side dishes or serve the broth.

After the resting period, use a sharp knife to slice the corned beef against the grain into thin slices. This will help to ensure that the meat is tender and easy to chew. Serve it with the cooked vegetables and some of the cooking liquid for a delicious and comforting meal.

  • 1 large onion, peeled and sliced
  • 3 -4 lbscorned beef brisket (with spice seasoning packet, optional)
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons molasses sugar or dark brown sugar
  • 1 (12 oz) Guinness Stout Beer

HOW TO COOK SLOW COOKER CORNED BEEF & CABBAGE WITH BEER?

Rinse the corned beef thoroughly in cold water several times. Do this especially if you get one packed with its brine. Do not skip this because you want to rinse out any excess salt or you might end up with very salty corned beef. Don’t worry about rinsing away the flavor, the meat is fully infused with flavor by this point. Keep the spice seasoning packet if you wish to use it.

Place the sliced onions at the bottom of the slow cooker. Add the corned beef brisket on top. Sprinkle the seasoning spice all over the brisket (if using). You don’t need the spice packet for this so this step is optional.

Combine the balsamic vinegar with the sugar. Pour over the brisket. Pour the beer and water on the sides of the brisket.

Add the bay leaves. Place the potatoes and carrots on the side or around the meat. I have a big slow cooker so I could do this. But if you have a small crockpot, just place the veggies either on the side or on top of the meat. Adding the meat on top ensures it won’t get mushy. Alternatively, you can also add the veggies after 6 hours when the meat is already tender or almost to that point. Cook on a low setting in the slow cooker for 8-10 hours or until the meat is fork-tender. Place cabbage wedges on top of the meat during the last 1-2 hours of cooking.

TIPS & TRICKS

Some similar recipes place the vegetables at the bottom and top them with the meat. If you feel comfortable doing that, then do so. My slow cooker (despite the name) is pretty fast cooking so to ensure they don’t overcook I place my vegetables on top of the meat or on the side.

FAQs

What does beer do to corned beef? ›

You need its connective tissue to break down so you can have tender results. Some like to braise their corned beef in an all-water liquid, with various spices and salt; others add beer to the mix to further tenderize the meat.

Does slow cooking with beer remove alcohol? ›

A roast in a covered slow cooker simmering in a wine or beer broth is going to retain more alcohol than a dish that's cooked uncovered for two hours in a hot oven. Alcohol retention during cooking also depends on the size of the pan or dish. The smaller the cooking vessel, the more alcohol will be retained.

Does corned beef need to be covered with liquid in a slow cooker? ›

You can add seasonings other than salt, like black peppercorns and bay leaves. Keep the brisket submerged at all times as well since it's the water actually transferring heat into the meat and cooking it. Letting the top become exposed will dry out the meat and slow down the cooking process, leading to uneven doneness.

What is the secret to the best corned beef? ›

One of the keys to simmering corned beef correctly is the amount of water in the pot. When there's not ample liquid to cover the meat, your dreams of tender corned beef may be replaced by a tough, chewy result. Instead: Start by filling a large pot with enough water so the corned beef is completely submerged.

What kind of beer is best for corned beef? ›

Ale: Red ales (something like Smithwicks; Killian's is actually a stateside invention) are malty and mildly sweet — a good pair for corned beef or shepherd's pie (or, frankly, a full Irish breakfast, but we won't encourage that).

Why is my slow cooker corned beef tough? ›

Not cooking the meat long enough.

Brisket, the cut typically used for corned beef, is a naturally tough cut of meat. Cooking this beef is a process that can't be rushed. Even when the meat is cooked through, it needs more time to transform the chewy bite into one that's deliciously tender.

What happens if you don't rinse corned beef before cooking? ›

Many recipes don't include a step for rinsing the meat, but it's worth doing it anyway. Depending on the pickling solution used for the meat, you may be in for a saltier meal than you bargained for if you cook the meat without rinsing it. And don't worry: Rinsing won't make the beef taste bland!

Can you overcook corned beef in a slow cooker? ›

You can overcook corned beef in a Crock-Pot if it's cooked for too long at too high of a temperature. Overcooked corned beef can taste tough and stringy. It's best to follow the recommended cook time and temperature within the recipe.

Can you cook corned beef in a slow cooker without water? ›

Does corned beef need to be covered with water in a slow cooker? - Quora. No, it does not need to be covered in water in a slow cooker. In a slow cooker you really only want to add enough water to cover the bottom on the dish a little bit. If you boil the meat, by means of completely covering it, it will toughen up.

Does corned beef get more tender the longer it is cooked? ›

Information. Corned beef is made from one of several less tender cuts of beef like the brisket, rump, or round. Therefore, it requires long, moist cooking. Corned beef is safe once the internal temperature has reached at least 145 °F, with a three minute rest time, but cooking it longer will make it fork-tender.

What is the best cooking method for corned beef? ›

The most common method for cooking corned beef and cabbage is boiling. Put the meat in a large pot, cover it with water or beef broth, add a seasoning packet and boil before lowering the heat to a simmer. Cook for 2 to 3 hours or until the meat is tender and cooked to your liking.

Do you cook corned beef fat side up or down? ›

Remove Corned Beef from package and place fat-side up in oven-proof pan. Add 1″ of water and mix in seasoning from spice packet. Tightly seal pan with lid or foil. Remove meat from oven and let rest 10 mins.

What does adding beer to meat do? ›

Beers can add rich, caramel-like flavor to the meat with minimal cooking time. One of the most effective ways to tenderize your meat is by using beer. Beer contains alpha acids and tannins that help break down fibers in meat, making it more tender and flavorful. Marinate using beer for an hour or more before grilling.

Does the alcohol cook out of corned beef? ›

According to the U.S. Department of Agriculture (USDA), baked or simmered dishes that contain alcohol will retain 40% of the original amount after 15 minutes of cooking, 35% after 30 minutes and 25% after an hour. But there's no point at which all of the alcohol disappears.

Why cook beef in beer? ›

Just like marinating with wine, beer naturally helps to tenderize cuts of meat as well as add flavor.

How to make corned beef more tender? ›

Another popular method for producing tender and juicy meat is slow cooking. Slow cooker corned beef brisket is easy to make using a crock pot, adding chopped vegetables, herbs and spices to the meat, and cooking for 8 to 10 hours on low heat.
